Zucchini Overload

We have a few all-stars in our garden this year and one of those is zucchini. It's coming out of our ears people! No matter what cabinet or door I open in the kitchen, zucchini! It's everywhere! Don't get me wrong, I'm grateful for the bounty, but come on y'all, you can only stand so much squash! So being the creative little soul I am, I had to come up with some new ways to serve up this bad boy. I've pinned quite a few of my findings on my Pinterest boards and today I thought I would try this one for lunch. With kids, you've got to get creative and be a little sneaky. I knew that if I was to get any more zucchini into them, I'd have to hide it! This recipe has a cute little name and LOTS of cheese involved, so I figured it would pass the kid test. It did! Score! My seven year old said, "can I have some more?", yep, success! Here's the link back to the original recipe and here was my take on it today:

Zucchini Pizza Bites


Zucchini {1 per person approx.}
Marinara Sauce
Mozzarella or Cheddar Cheese
Olive Oil
Salt and Pepper
Favorite toppings

Pre-heat oven to 450*. Slice zucchini in 1/2 in. widths. Place in large bowl and coat with olive oil and salt and pepper. Then arrange them on a foil lined baking sheet {for easy breezy clean up}. Spread the marinara sauce on tops of all slices and then generously sprinkle with grated cheese. I had cheddar on hand, so that's what I used. I didn't put any other toppings but you could add anything else that suits your fancy! Bake for 5-7 minutes, then turn oven to broil for another 5 minutes so that the cheese gets a little brown and bubbly. Enjoy!

The only downside I found to this recipe is that they take too long to cool! I may or may not have burned my tongue seeing as how I have NO patience at all! They were delicious and such a simple and healthy lunch. Don't forget to pin to your boards so you'll have the recipe filed away!
