A Frugal Dinner {#1}


Do you notice that sometimes we get into a cooking rut? I sure do. We need something different for dinner, but still quick, healthy, and frugal. After all of last weeks posts on "Surviving And Thriving On One Income", I thought I would try to post more of our simple and frugal meals. This is dinner at our house tonight. This recipe meets our whole foods requirements, but you feel free to substitute any of your usual ingredients. This recipe didn't receive a single thumbs down at our house. Enjoy Everyone!




Turkey and Rice Casserole

  1. 1 lb. ground turkey
  2. 2  {14.5 ounce cans} of organic diced tomatoes
  3. 1/2 cup chopped onion
  4. Brown Rice Cooked {I cook 2 1/2 cups for this recipe}
  5. Salt and pepper to taste
  6. 1 cup grated cheese
  7. Fresh parsley {from our garden!} to garnish
Brown ground turkey and onion in skillet.  Then add diced tomatoes and simmer for 10 minutes. Add  salt and pepper, and cooked rice to browned turkey/onion/tomato mixture. Stir well to incorporate all ingredients. Place in greased 13x9 casserole dish. Cover with foil and bake at 350* for 10 minutes. Remove and sprinkle with 1 cup grated cheese. Return to oven uncovered for 7-10 minutes until cheese is bubbly. Enjoy!
